In general, Arrabbiata is a traditional Italian sauce which is able to make the taste of any dish. Originally it is used for pasta; in particular it is good with penne. We hope that everybody knows Jamie Oliver. He is a gifted cook hosting his own TV show full of marvelous recipes and stories about foods. Perhaps he is not the best but he is perfect in turning the average day into a festive one.
He offers to serve chicken breasts with this hot Italian sauce. You will spend about quarter of hour for preparation and cook the dish during additional 40 minutes. Take four pieces of skinless chicken breasts and a kilo of tomatoes including 400 gr tinned ones and 600 g fresh vegies. Now you will need 6 cloves of garlic and 5 fresh red chilies. To make the dish special, you should add baby capers, black olives, basil, and parmesan cheese. Of course, olive oil is needed also.
The meat should be tenderized until each piece becomes 1 cm thick. Sprinkle it with salt, black pepper and olive oil. Set aside. Now the time for the sauce comes. In a pan with oil you should mix the whole pieces of chilies, garlic and basil leaves and cook for 20 minutes. When the mixture is ready, pull the chilies out, take away the seeds, cut the flash and return to a pan. Add tinned tomatoes and coock for another 20 minutes. Put the sliced fresh tomatoes with black olives and capers to the tomatoes sauce. Meanwhile the meat should be cooked on a preheated griddle pan for a couple of minutes on every side. It must be well-done. Cut the cooked breasts in strips and serve with sauce and parmesan sprinkled over the top.
